Ingredients

  • 2 ripe bananas, mashed
  • 1 1/2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup chopped nuts (optional)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. In a bowl, mix mashed bananas, honey, and vanilla until combined.
  3. Stir in oats, cinnamon, and nuts if using.
  4. Pour mixture into the prepared dish and press down evenly.
  5. Bake for 20-25 minutes or until golden brown.
  6. Allow to cool before cutting into bars.

Notes

Can customize with chocolate chips or dried fruits. Store in an airtight container for up to a week.
