- 2 ripe bananas, mashed
- 1 1/2 cups rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup chopped nuts (optional)
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
- In a bowl, mix mashed bananas, honey, and vanilla until combined.
- Stir in oats, cinnamon, and nuts if using.
- Pour mixture into the prepared dish and press down evenly.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
Can customize with chocolate chips or dried fruits. Store in an airtight container for up to a week.
