Love it! It’s a basic custard and you can make endless variations by tweaking the ratios and flavorings. Try vanilla bean instead of lemon zest and you’ve got something very much like crème pâtissière, which you can use to fill homemade donuts or scones. Use cream instead of milk, and meddle with the ratios a bit differently for crème anglaise. This is such a cool dessert because it’s so flexible. You can use AP flour instead of corn starch (which is called corn flour in most places outside North America, I think) for a subtle difference in flavor.
One of the greatest desserts ever invented uses creme anglaise as a starter. It’s called Grape Juice Fluff. After prepping a quart of crème anglaise and putting in the fridge to chill, make a grape juice gelatin, with a cup plus three tbsp grape juice, the fresh juice of a lemon and an orange, 2 egg whites whipped to stiff peaks, 3/4 cup of sugar, a pinch of salt and an envelope of plain gelatin. Soften the gelatin in the three tbsp grape juice, then add to the rest of the grape juice and cook over medium heat, stirring frequently, just until it reaches a boil. Then turn off heat but leave boiler on stove. You want the boiling to stop but simmering to continue for a moment, so if you’re on a gas stove turn the flame down very low before turning off. Just as you turn down or off the heat from boiling, add the other juices, sugar and salt. Stir frequently until the mixture is no longer simmering. Set the boiler aside to cool, and when it reaches the point that the mixture is still slightly warmer than room temperature and mostly but not entirely set, fold in the stiffly whipped egg whites. Now take the cooled custard out of the fridge, set out your desert cups or glasses, and layer the custard and the grape gelatin into them. Try to finish each with grape gelatin on top of custard, such that the grape appears centered with a ring of custard around it. You don’t want to leave all custard on top or a film will form. I guess you could use plastic wrap to avoid that, but I just make sure the top is mostly gelatin. Refrigerate at least a couple hours, or up to two days ahead (and of course you do need to fully cover them if you’re chilling them longer than a few hours. When it’s time to serve, add a dollop of fresh whipped cream and some chopped pecans to each serving. This stuff is amazing!
I’ve made this dessert so many times I’ve committed it to memory, but you can find a more formal version of the recipe for grape juice fluff in a cookbook called Southern Sideboards. I have an old printed copy that belonged to my mother, but you can get it on Kindle. It features a lot of southern versions of classic French dishes.
