  • 225ml Guinness stout
  • 225g unsalted butter
  • 75g cocoa powder
  • 400g caster sugar
  • 150ml sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 275g plain flour
  • 2.5 tsp baking soda
  • For the Irish Cream Frosting:
  • 300g cream cheese, softened
  • 50g unsalted butter, softened
  • 400g icing sugar
  • 3–4 tbsp Irish cream liqueur

Instructions

  1. Preheat your oven to 180Β°C (350Β°F). Grease and line a 9-inch springform cake tin with parchment paper. In a saucepan, combine the Guinness stout and butter, heating until the butter is melted. Remove from heat and whisk in cocoa powder and caster sugar until smooth, then set aside to cool.
  2. In a separate bowl, whisk together sour cream, eggs, and vanilla extract. Add to the cooled Guinness mixture and stir until well combined. In another bowl, sift flour and baking soda. Gradually mix dry ingredients into wet ingredients, mixing until just combined.
  3. Pour the batter into the prepared cake tin and bake for 45-55 minutes, or until a skewer inserted into the center comes out clean. Let cool in the tin for 10 minutes before transferring to a wire rack.
  4. Prepare the Irish cream frosting by beating softened cream cheese and butter until smooth and creamy. Gradually add icing sugar, beating until fluffy. Add Irish cream liqueur until desired consistency is reached. Once the cake is cool, frost the top and serve.
