Grilled Portobello Mushrooms: A savory vegetarian delight that’s flavorful and easy to make, perfect for any barbecue or as a healthy side dish.

Ingredients

  • 4 large portobello mushrooms, stems removed
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Gently clean the portobello mushrooms with a damp cloth and remove the stems.
  2. Brush the caps with olive oil.
  3. In a bowl, whisk together olive oil, garlic, balsamic vinegar, thyme, rosemary, salt, and pepper.
  4. Place mushrooms in a dish and pour marinade over them. Let marinate for 30 minutes to 2 hours.
  5. Preheat your grill to medium heat and place mushrooms cap-side down on the grill.
  6. Grill for 5-7 minutes per side until tender with grill marks.
