  • Total Time: 20 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 250g halloumi cheese, sliced
  • 5 oz mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh mint or parsley, chopped (optional)

Instructions

  1. Pat the halloumi slices dry and preheat the grill to medium-high. Grill each side for 2-3 minutes until golden brown.
  2. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  3. Slice the grilled halloumi into bite-sized pieces and add to the salad.
  4. In a small bowl, whisk olive oil, lemon juice, Dijon mustard, salt, and pepper. Drizzle over the salad and toss gently. Garnish with fresh herbs if desired.

Notes

  • Don’t overcrowd the grill for even cooking.
  • High-quality olive oil enhances the dressing’s flavor.
  • Dress the salad just before serving to prevent sogginess.
  • Feel free to add grilled chicken or chickpeas for extra protein.
  • Customize with grains, fruits, or nuts for added texture.
