Ingredients

  • ½ cup Kalamata olives, pitted
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Pat the halloumi slices dry and preheat the grill to medium-high. Grill each side for 2-3 minutes until golden brown.
  2. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, and Kalamata olives.
  3. Slice the grilled halloumi into bite-sized pieces and add to the salad.
