  • 3 cups chicken broth
  • 1 cup orzo pasta
  • 1 cup shredded Gruyere or Swiss cheese
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and caramelize the onions until golden brown; set aside.
  3. In the same skillet, cook chicken until browned and cooked through. Add garlic and thyme, season with salt and pepper.
  4. In a baking dish, combine cooked chicken, caramelized onions, orzo, chicken broth, and half of the shredded cheese. Mix well.
  5. Bake uncovered for 25-30 minutes until bubbly and cheese is melted and golden.
  6. Garnish with fresh parsley before serving.
