- 1 pound chicken breasts, cut into bite-sized pieces
- 1 large onion, thinly sliced
- 2 tablespoons olive oil
- 3 cups chicken broth
- 1 cup orzo pasta
- 1 cup shredded Gruyere or Swiss cheese
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and caramelize the onions until golden brown; set aside.
- In the same skillet, cook chicken until browned and cooked through. Add garlic and thyme, season with salt and pepper.
- In a baking dish, combine cooked chicken, caramelized onions, orzo, chicken broth, and half of the shredded cheese. Mix well.
- Bake uncovered for 25-30 minutes until bubbly and cheese is melted and golden.
- Garnish with fresh parsley before serving.
Notes
- You can substitute Swiss cheese with Gruyere or Cheddar for different flavors.
- For a creamier consistency, stir in a splash of heavy cream before baking.
