Ingredients
Scale
- 4 ripe peaches, peeled and sliced
- ½ cup unsalted butter
- 1 cup light brown sugar
- 1½ cups all-purpose flour
- 1½ teaspoons baking powder
- ½ teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup whole milk
Instructions
- Preheat oven to 350°F (175°C). Melt butter in a small saucepan over medium heat. Add brown sugar and stir until smooth. Pour caramel mixture into a 9-inch round cake pan, spreading evenly.
- Arrange sliced peaches over the caramel layer in the pan.
- In a large bowl, whisk together flour, baking powder, and salt. In another bowl, beat together granulated sugar and eggs until creamy. Mix in vanilla extract and milk until combined.
- Gradually fold dry ingredients into wet ingredients to form a smooth batter. Carefully spoon batter over peaches, smoothing the top.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes.
- Invert the cake onto a serving plate, removing the pan gently to reveal caramelized peaches on top. Serve warm or at room temperature with vanilla ice cream or whipped cream.
Notes
- Use canned peaches if fresh are not available; drain and pat dry thoroughly.
- Can be made in square baking dishes or ramekins for individual servings.
- Replace all-purpose flour with gluten-free flour for gluten-free options.
