- 4 large eggs
- 2 tbsp mayonnaise
- 1 tsp soy sauce
- 1 tsp mirin (optional)
- Salt and pepper to taste
- 8 slices of white bread
- Butter or mayonnaise for spreading
- Fresh greens for garnish
Instructions
- Hard boil the eggs and let them cool.
- Peel and mash eggs in a bowl.
- Add mayonnaise, soy sauce, mirin, salt, and pepper; mix until creamy.
- Spread butter or mayonnaise on bread slices.
- Divide egg mixture evenly among four slices, top with remaining slices.
- Press gently and cut diagonally to serve, Garnish with greens.
Notes
- For extra flavor, add a pinch of sugar or a dash of rice vinegar to the egg mixture.
- Use fresh, soft bread for best texture.
