Ingredients

  • 4 large russet potatoes, cut into chunks

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese

  • 1/2 cup sour cream

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss potato chunks with olive oil, salt, and pepper. Roast for 25-30 minutes until crispy.
  2. While potatoes roast, cook ground beef with taco seasoning until browned, then set aside.
  3. Once potatoes are cooked, assemble bowls with roasted potatoes, seasoned meat, cheese, tomatoes, and a dollop of sour cream.
