- 4 large russet potatoes, cut into chunks
- 2 tbsp olive oil
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Toss potato chunks with olive oil, salt, and pepper. Roast for 25-30 minutes until crispy.
- While potatoes roast, cook ground beef with taco seasoning until browned, then set aside.
- Once potatoes are cooked, assemble bowls with roasted potatoes, seasoned meat, cheese, tomatoes, and a dollop of sour cream.
- Sprinkle chopped green onions on top and serve immediately.
Notes
- You can prepare components in advance and assemble just before serving for quick meal prep.
- For a vegetarian version, substitute with black beans or grilled veggies.
