Ingredients

  • 8 oz sweet potato starch noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons sugar
  • 1/2 cup sliced carrots
  • 1/2 cup spinach
  • 1/2 cup sliced shiitake mushrooms
  • 2 tablespoons vegetable oil
  • 1/2 lb thinly sliced beef or chicken (optional)
  • Sesame seeds for garnish

Instructions

  1. Cook noodles according to package instructions, drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add beef and cook until browned, then add vegetables and stir-fry until tender.
  3. Mix soy sauce, sesame oil, and sugar in a bowl. Add to the skillet and toss to coat evenly.
  4. Add cooked noodles to the skillet and stir-fry for 2-3 minutes until well combined and glossy.
  5. Garnish with sesame seeds before serving.
