- 8 oz sweet potato starch noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons sugar
- 1/2 cup sliced carrots
- 1/2 cup spinach
- 1/2 cup sliced shiitake mushrooms
- 2 tablespoons vegetable oil
- 1/2 lb thinly sliced beef or chicken (optional)
- Sesame seeds for garnish
Instructions
- Cook noodles according to package instructions, drain and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add beef and cook until browned, then add vegetables and stir-fry until tender.
- Mix soy sauce, sesame oil, and sugar in a bowl. Add to the skillet and toss to coat evenly.
- Add cooked noodles to the skillet and stir-fry for 2-3 minutes until well combined and glossy.
- Garnish with sesame seeds before serving.
Notes
- Feel free to substitute beef with tofu for a vegetarian option.
- Adjust soy sauce and sugar for preferred sweetness and saltiness.
