- 4 large bell peppers (red, yellow, or green)
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, cook ground beef, onion, and garlic until meat is browned.
- Mix cooked rice, tomato sauce, Italian seasoning, salt, and pepper into the beef mixture.
- Stuff the peppers with the beef and rice filling.
- Place stuffed peppers in a baking dish, top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
- Garnish with fresh parsley and serve hot.
