- 4–5 ripe peaches, sliced
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 tablespoon all-purpose flour
- 1 prepared pie crust (or make your own using fullstar ultimate veggie prep master for perfect veggie and fruit prep)
- 1 egg, beaten (for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- In a mixing bowl, combine sliced peaches with granulated sugar, lemon juice, vanilla extract, cinnamon, and flour. Toss gently to coat all the slices evenly. Let sit for about 10 minutes to macerate.
- Roll out the pie crust on a lightly floured surface to a 12-inch circle. Transfer to a parchment-lined baking sheet. Spoon the peach filling into the center, leaving a 2-inch border.
- Gently fold the crust edges over the filling, pleating as needed to create a rustic border. Brush with beaten egg and sprinkle with coarse sugar if desired.
- Preheat oven to 400°F (200°C). Bake for 35-40 minutes until the crust is golden and peaches are bubbly. Allow to cool slightly before serving.
Notes
- Let the galette cool slightly to set before slicing for easier serving.
- Use very ripe peaches for the best flavor and texture.
- For a sweeter topping, sprinkle more coarse sugar before baking.
- Serve with whipped cream or vanilla ice cream for added indulgence.
