- 1 pound ground beef
- 1 can diced tomatoes
- 1 can black beans, drained
- 1 can corn kernels
- 1 packet taco seasoning
- 1 cup beef broth
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapenos, avocado slices
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add diced tomatoes, black beans, corn, taco seasoning, and beef broth to the pot. Stir well.
- Bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
- Serve hot, topped with your favorite toppings such as shredded cheese, sour cream, cilantro, jalapenos, and avocado.
Notes
- Feel free to customize with different beans or add additional vegetables like bell peppers or zucchini.
- For a milder version, reduce the amount of taco seasoning or omit jalapenos.
