- 1 lb ground beef or chicken
- 2 cups pasta (penne, fusilli, or your favorite)
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach or kale
- 1/2 cup shredded cheese (mozzarella or cheddar)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs like basil or parsley (optional)
Instructions
- Boil a large pot of water and cook your selected pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and cook until fragrant. Add ground beef or chicken and cook until browned. Stir in cherry tomatoes and cook for an additional 2 minutes. Mix in the spinach until wilted.
- Add the cooked pasta to the skillet with the meat and vegetables. Toss everything together, sprinkle with shredded cheese, and cook for another minute until the cheese melts. Garnish with fresh herbs if desired and serve warm.
Notes
- Allow leftovers to cool completely before storing in airtight containers. These meals can be refrigerated for up to 3 days or frozen for longer storage.
- Reheat in the microwave or skillet until heated through. For added flavor, sprinkle extra cheese or herbs before serving.
