  • 1 lb ground beef
  • 1 cup cooked rice
  • 1/2 cup diced onions
  • 1/2 cup chopped tomatoes
  • 1 cup shredded cheddar cheese
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and cook ground beef until browned.
  3. Add diced onions, tomatoes, taco seasoning, and cook for 5 minutes.
  4. Mix in cooked rice and stir well.
  5. Stuff each bell pepper half with the beef mixture and place on a baking dish.
  6. Sprinkle shredded cheese over each stuffed pepper.
  7. Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
