  • 1 lb ground beef or turkey
  • 1 package taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup ranch dressing
  • 20 mini egg roll wrappers or wonton wrappers
  • 1 cup diced tomatoes
  • 1 cup chopped lettuce
  • 1 avocado, diced
  • Chopped cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet, cook ground meat until browned. Stir in taco seasoning and cook for 2 minutes. Remove from heat.
  2. Lay wrappers on a flat surface. Place a spoonful of meat mixture in the center of each wrapper.
  3. Fold the wrappers to encase the filling and seal the edges.
  4. Place the bites on a baking sheet lined with parchment paper. Bake for 15-20 minutes until crispy.
  5. Drizzle ranch dressing over the baked bites. Top with diced tomatoes, lettuce, avocado, and cilantro. Serve immediately.
