- 4 boneless chicken breasts
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon cornstarch (optional for thickening)
- Green onions and pineapple slices for garnish
Instructions
- Place chicken breasts in the crockpot.
- Mix soy sauce, honey, garlic, and ginger in a bowl and pour over chicken.
- Add pineapple chunks on top.
- Cook on low for 6 hours or high for 3 hours until chicken is tender.
- Optional: Thicken the sauce with cornstarch mixed with a little water and cook for an additional 10 minutes.
- Serve over rice, garnished with green onions and pineapple slices.
Notes
- Adjust sweetness by adding more or less honey.
- Use fresh pineapple for better flavor or canned for convenience.
- Can be served with steamed vegetables or a side of rice noodles.
