Ingredients

  • 1 pound Italian sausage, sliced
  • 1 package (9 oz) tortellini
  • 4 cups chicken broth
  • 2 cups fresh spinach, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley or basil)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until translucent.
  3. Add chicken broth and bring to a boil. Stir in tortellini and cook according to package instructions, about 3-4 minutes.
  4. Return sausage to the pot, add spinach, and cook until wilted.
  5. Season with salt and pepper. Serve hot, garnished with grated Parmesan and fresh herbs.
