- 1 pound Italian sausage, sliced
- 1 package (9 oz) tortellini
- 4 cups chicken broth
- 2 cups fresh spinach, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (parsley or basil)
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same pot, sauté diced onion and minced garlic until translucent.
- Add chicken broth and bring to a boil. Stir in tortellini and cook according to package instructions, about 3-4 minutes.
- Return sausage to the pot, add spinach, and cook until wilted.
- Season with salt and pepper. Serve hot, garnished with grated Parmesan and fresh herbs.
Notes
- Use the best quality sausage for added flavor.
- Feel free to add a pinch of red pepper flakes for some heat.
