- 1 baguette or rustic bread, sliced
- 4–5 ripe tomatoes, diced
- 2 cloves garlic, minced
- Fresh basil leaves, chopped
- Extra virgin olive oil
- Balsamic vinegar (optional)
- Salt and freshly ground black pepper
- Optional toppings: shredded Parmesan, mozzarella, or red pepper flakes
Instructions
- In a mixing bowl, combine the diced tomatoes, minced garlic, chopped basil, a generous splash of olive oil, and balsamic vinegar if desired. Season with salt and pepper, then mix well and set aside.
- Preheat your oven to 400°F (200°C). Arrange bread slices on a baking sheet and toast until golden brown, about 5-7 minutes.
- Rub each toasted bread slice with a cut garlic clove for flavor. Spoon the tomato mixture generously onto each piece. Drizzle with more olive oil and optionally sprinkle with shredded Parmesan or red pepper flakes.
Notes
- Store the tomato topping separately in an airtight container in the refrigerator for up to 2 days. For best crispiness, assemble just before serving.
