Ingredients
Scale
- 4 cups of fresh ripe figs, chopped
- 1 cup of organic cane sugar
- Juice of 1 lemon
- 1 teaspoon of vanilla extract (optional)
- Pinch of salt
Instructions
- Start by rinsing your figs thoroughly under cold water. Remove the stems and chop the figs into small pieces for quicker cooking and better texture in your jam.
- In a large saucepan, combine chopped figs, sugar, and lemon juice. Bring the mixture to a gentle simmer over medium heat, stirring constantly to prevent sticking and burning.
- Continue to simmer the mixture, stirring frequently, until it thickens to a jam-like consistency. This process typically takes about 20-30 minutes. Patience is key, as no pectin is used.
- During the last 5 minutes of cooking, stir in vanilla extract if desired for a fragrant aroma and added flavor.
- Pour the hot jam into sterilized jars. Seal tightly and allow to cool completely before refrigerating. Store in the fridge for up to 3 weeks or process in a water bath for longer shelf life.
Notes
- Use ripe, fragrant figs for the best flavor.
- Stir frequently to prevent burning, especially toward the end of cooking.
- If you prefer a smoother texture, blend the jam briefly with an immersion blender after cooking.
- Experiment with flavor additions like cinnamon or a splash of brandy for personalized twists.
