Ingredients

  • 2 lbs beef chuck roast, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides, then remove and set aside.
  3. Sauté onion, garlic, carrots, and celery until tender.
  4. Add beef back to the pot, pour in beef broth, and season with thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 1.5-2 hours until beef is tender and flavors meld.
  6. Add potatoes during the last 30 minutes of cooking.
