Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 ripe peaches, sliced
- 1 cup barbecue sauce (homemade or store-bought)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil or cilantro for garnish (optional)
Instructions
- Preheat your oven to 400Β°F (200Β°C). Rub the chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange them in a baking dish along with the sliced peaches.
- Pour the barbecue sauce evenly over the chicken and peaches, ensuring everything is well coated.
- Place the baking dish in the oven and roast for 25-30 minutes, until the chicken reaches an internal temperature of 165Β°F (74Β°C) and peaches are caramelized.
- Remove from oven and let rest for a few minutes. Garnish with fresh basil or cilantro before serving.
Notes
- Use ripe peaches for optimal flavor and caramelization.
- Thaw frozen peaches and drain excess water before adding to prevent sogginess.
- You can customize the sweetness by making your own barbecue sauce with honey or natural sweeteners.
- Serve with grilled vegetables, rice, or a fresh green salad for a complete summer meal.
