- 1 pound ground beef
- 4 large potatoes, thinly sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or your favorite)
- 1 cup frozen mixed vegetables or fresh spinach
- 1 can cream of mushroom or cream of chicken soup
- 1 teaspoon paprika
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Slice the potatoes thinly and dice the onion. Mince the garlic.
- In a large skillet, heat olive oil over medium heat. Cook diced onion and minced garlic until fragrant. Add ground beef, season with salt, pepper, and paprika, and cook until browned. Drain excess fat if needed.
- Stir in the cream of mushroom or chicken soup. Add vegetables and cook for 2-3 minutes until slightly tender. Remove from heat.
- In a baking dish, layer half of the sliced potatoes. Spread the beef mixture over the potatoes, then top with remaining potato slices. Sprinkle shredded cheese evenly over the top.
- Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.
