Instructions

- Mix honey (or maple syrup), vanilla extract, and ground cinnamon in a small bowl. Drizzle this mixture evenly over the peaches, ensuring each half is well coated.
- Place the baking dish in the preheated oven. Bake uncovered for about 20-25 minutes, or until the peaches are tender and slightly caramelized around the edges. Spoon some of the juices over the peaches halfway through baking.
- Garnish with fresh mint leaves and serve warm. For extra indulgence, top with whipped cream or vanilla ice cream.
