- 1 lb boneless, skinless chicken breasts
- 1 package (9 oz) refrigerated tortellini
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place chicken breasts in the crockpot and pour chicken broth over them.
- Cook on low for 4 hours, then shred the chicken with two forks.
- Add garlic, Italian seasoning, salt, and pepper to the crockpot. Stir well.
- Add tortellini and heavy cream; cook on high for 20-25 minutes or until tortellini is tender.
- Stir in Parmesan cheese and garnish with chopped parsley before serving.
Notes
- You can substitute fresh herbs for dried for a fresher flavor.
- Adjust cooking time if using frozen tortellini or chicken.
