- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract

- ½ cup sour cream
- Additional cinnamon sugar for topping
- For the churros:
- ½ cup water
- 2 tablespoons unsalted butter
- ¼ cup all-purpose flour
- 1 large egg
- ½ teaspoon vanilla extract
- ½ cup granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and cinnamon. Mix in sour cream.
- Pour filling over crust. Bake for 50-55 minutes until set. Cool completely.
- For churros: Heat water and butter until boiling. Add flour, stir vigorously. Remove from heat, cool slightly. Mix in egg and vanilla until smooth.
- Pipethe churro batter into piping bag. Pipe into hot oil or bake until golden. Toss in cinnamon sugar.
- Decorate cheesecake with churros and dust with cinnamon sugar. Chill before serving.
