  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ cup sour cream
  • Additional cinnamon sugar for topping
  • For the churros:
  • ½ cup water
  • 2 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes.
  2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and cinnamon. Mix in sour cream.
  3. Pour filling over crust. Bake for 50-55 minutes until set. Cool completely.
  4. For churros: Heat water and butter until boiling. Add flour, stir vigorously. Remove from heat, cool slightly. Mix in egg and vanilla until smooth.
  5. Pipethe churro batter into piping bag. Pipe into hot oil or bake until golden. Toss in cinnamon sugar.
  6. Decorate cheesecake with churros and dust with cinnamon sugar. Chill before serving.
