- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sour cream
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together sour cream, oil, eggs, and vanilla. Add to dry ingredients and stir until just combined.
- In a small bowl, beat cream cheese and powdered sugar until smooth.
- Pour half of the batter into the loaf pan. Spread cream cheese mixture over the batter, then top with remaining batter.
- Gently fold blueberries into the top layer or sprinkle on top.
- Bake for 55-60 minutes until a toothpick inserted in the center comes out clean.
- Cool before slicing and serving.
Notes
- Use fresh blueberries for best flavor.
- You can substitute with frozen blueberries; do not thaw before adding.
