Ingredients

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together sour cream, oil, eggs, and vanilla. Add to dry ingredients and stir until just combined.
  4. In a small bowl, beat cream cheese and powdered sugar until smooth.
  5. Pour half of the batter into the loaf pan. Spread cream cheese mixture over the batter, then top with remaining batter.
  6. Gently fold blueberries into the top layer or sprinkle on top.
  7. Bake for 55-60 minutes until a toothpick inserted in the center comes out clean.
  8. Cool before slicing and serving.
