Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with butter or non-stick spray.
- In a small bowl, mix chopped pecans, honey (or maple syrup), melted butter, vanilla extract, cinnamon, and salt until well combined.
- Place the peach halves in the prepared baking dish, cut side up. Spoon the pecan filling into each peach cavity, pressing lightly.
- Bake for 20-25 minutes until peaches are tender and topping is golden brown. For extra quick caramelization, broil for 2-3 minutes, watching carefully.
- Remove from oven, let cool slightly. Serve warm topped with vanilla ice cream or Greek yogurt. Garnish with mint or honey if desired.
