- 200g dried pasta (penne or fusilli)
- 200g feta cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Fresh basil leaves, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). In a baking dish, combine cherry tomatoes, zucchini, garlic, and olive oil. Make space in the center and place feta cheese.
- Bake for 20 minutes until vegetables are tender and feta is golden.
- Meanwhile, cook pasta according to package instructions. Drain and set aside.
- Remove baked feta and vegetables from oven, mash feta slightly, and mix with cooked pasta. Add chopped basil, salt, and pepper. Toss well and serve hot.
Notes
- For extra flavor, sprinkle with chili flakes or lemon zest before serving.
- You can add protein like grilled chicken or shrimp for a more filling dish.
