Ingredients

  • 200g dried pasta (penne or fusilli)
  • 200g feta cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a baking dish, combine cherry tomatoes, zucchini, garlic, and olive oil. Make space in the center and place feta cheese.
  2. Bake for 20 minutes until vegetables are tender and feta is golden.
  3. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  4. Remove baked feta and vegetables from oven, mash feta slightly, and mix with cooked pasta. Add chopped basil, salt, and pepper. Toss well and serve hot.

  • For extra flavor, sprinkle with chili flakes or lemon zest before serving.
