Ingredients

For the Icing:

  • 4 cups powdered sugar
  • 5–7 tablespoons milk
  • 1 teaspoon vanilla extract
  • Food coloring gels

Instructions

  1. In a large mixing bowl, cream together softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  3. Divide the dough in half, flatten each half into discs, and wrap in plastic wrap. Refrigerate for at least 1 hour.
  4. Preheat oven to 350Β°F (175Β°C). Roll out the dough to about 1/4 inch thickness and cut shapes with Easter-themed cookie cutters.
  5. Bake for 8-10 minutes or until edges are lightly golden. Transfer to a cooling rack.
  6. Prepare icing by whisking powdered sugar, milk, and vanilla until smooth. Tint with food coloring and decorate cooled cookies.
