Instructions
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Divide the dough in half, flatten each half into discs, and wrap in plastic wrap. Refrigerate for at least 1 hour.
- Preheat oven to 350Β°F (175Β°C). Roll out the dough to about 1/4 inch thickness and cut shapes with Easter-themed cookie cutters.
- Bake for 8-10 minutes or until edges are lightly golden. Transfer to a cooling rack.
- Prepare icing by whisking powdered sugar, milk, and vanilla until smooth. Tint with food coloring and decorate cooled cookies.
