- 1/2 cup (115g) unsalted butter, cold and cubed
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (100g) brown sugar
- 1/2 cup (60g) quick oats
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, sugar, cinnamon, baking powder, and salt.
- Add cubed butter and mix with a pastry cutter or fingers until crumbly.
- In a separate small bowl, combine brown sugar and oats for the topping.
- Scoop spoonfuls of dough onto the baking sheet and flatten slightly.
- Sprinkle crumble topping evenly over each cookie.
- Bake for 12-15 minutes or until golden brown around the edges. Let cool before serving.
Notes
- For an extra flavor boost, add a teaspoon of lemon zest to the dough.
