- 1 lb beef stew meat, cubed
- 3 large potatoes, diced
- 2 carrots, sliced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Place beef, potatoes, carrots, onion, and garlic into the crock pot.
- Add beef broth, tomato paste, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours until beef is tender and vegetables are cooked through.
- Stir in frozen peas during the last 30 minutes of cooking.
- Serve hot with crusty bread.
Notes
- You can substitute chicken or turkey for beef for a lighter version.
- Add a splash of Worcestershire sauce for extra depth.
