Ingredients
- 2 large zucchinis, grated
- 1 small onion, finely chopped
- 2 large eggs
- 1/4 cup rice flour or almond flour (gluten-free)
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Olive oil or cooking spray for frying
- Fresh herbs (optional: parsley or dill)
Instructions
- Start by grating the zucchinis using the Fullstar Ultimate Veggie Prep Master. Place the grated zucchini in a clean dish towel, then squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, chopped onion, eggs, flour, garlic powder, salt, and pepper. Mix thoroughly until a sticky batter forms.
- Heat a non-stick skillet over medium heat and spray with olive oil or add some oil. Drop spoonfuls of the batter into the skillet and cook for about 3-4 minutes per side until golden and crispy.
- Alternatively, for extra crispiness, air fry the fritters at 375°F (190°C) using the Ninja Air Fryer Pro Crisp & Roast 4-in-1 for 8-10 minutes, shaking midway.
- Serve hot with Greek yogurt, lemon wedges, or your preferred dip. Garnish with fresh herbs if desired.
Notes
- Ensure the zucchini is well drained to prevent sogginess.
- To make vegan, substitute eggs with flaxseed meal or commercial egg replacer.
- Leftovers can be stored in the refrigerator for up to 2 days and reheated in a skillet or air fryer for best crispiness.
