Instructions
- Grate the potatoes and onion, then squeeze out excess moisture.
- In a bowl, combine grated vegetables, eggs, flour, salt, and pepper.
- Heat oil in a skillet over medium-high heat.
- Drop spoonfuls of batter into the hot oil and flatten slightly.
- Cook until golden and crispy on both sides, about 3-4 minutes per side.
- Drain on paper towels and serve hot with applesauce or sour cream.
Notes
- For extra crispiness, fry in enough oil to cover the pancakes halfway.
- You can add chopped herbs for variation.
