Ingredients
Scale
- 2 crisp apples (preferably Fuji or Honeycrisp), sliced thin
- 1 large cucumber, thinly sliced
- 1/2 cup Greek yogurt
- Fresh mint leaves, chopped (about 1/4 cup)
- 1 tablespoon honey or maple syrup (optional for added sweetness)
- Juice of 1/2 lemon
- Salt and freshly ground black pepper to taste
- Vegetable or olive oil for light dressing (optional)
Instructions
- Start by washing the apples and cucumber thoroughly. Thinly slice the apples and cucumber using a sharp knife or a Fullstar Ultimate Veggie Prep Master for quick results. Place them in a large mixing bowl.
- In a small bowl, whisk together the Greek yogurt, chopped mint, lemon juice, and honey or maple syrup. Season with a pinch of salt and freshly ground black pepper. This mint yogurt dressing adds a cooling, flavorful touch to the salad.
- Pour the mint yogurt dressing over the sliced apples and cucumber. Gently toss everything together until evenly coated. Adjust salt and pepper to taste.
- Refrigerate the salad for at least 15-20 minutes before serving to allow flavors to meld. Garnish with additional mint leaves if desired for extra freshness. Serve chilled for maximum refreshment.
Notes
- For added texture, consider tossing in toasted nuts or seeds.
- To prevent browning of the apples, sprinkle a little extra lemon juice on top before storing.
- This salad is best enjoyed within 24 hours for optimal freshness.
