- 2 cans of white beans, drained and rinsed
- 4 cups of vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 teaspoon thyme
- Salt and pepper to taste
- 4 slices of bacon, cooked until crispy
- Fresh herbs for garnish
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add white beans, vegetable broth, thyme, salt, and pepper. Simmer for 20 minutes.
- Blend half of the soup until smooth, then return to pot and stir.
- Cook bacon until crispy, crumble, and set aside.
- Serve soup topped with crispy bacon and fresh herbs.
Notes
- For added flavor, sauté the onion and garlic before blending
- Use turkey bacon for a healthier option
