- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn kernels
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef or chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: chopped cilantro, jalapenos, tortilla chips
Instructions
- Prepare the Ground Beef and Vegetables: In a large pot, heat a little oil over medium heat. Add the diced onion and minced garlic, cook until fragrant and translucent. Add ground beef, season with salt, pepper, chili powder, and cumin. Cook until browned.
- Add Tomatoes and Beans: Stir in diced tomatoes, black beans, and corn. Pour in broth and simmer gently for 10-15 minutes.
- Simmer and Add Cheese and Cream: Lower heat and stir in shredded cheddar cheese and sour cream until melted and soup is creamy.
- Serve and Garnish: Ladle into bowls, top with cilantro, jalapenos, and crushed tortilla chips. Optionally, add extra cheese or sour cream.

- For a healthier version, substitute ground turkey or chicken.
- Make vegetarian by skipping meat and adding extra beans and vegetables.
