- 8 oz spaghetti or pasta of choice
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup grated parmesan cheese
- 1 cup heavy cream
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add mushrooms and cook until browned.
- Stir in heavy cream and parmesan cheese until melted and creamy.
- Add spinach and cook until wilted.
- Mix in cooked pasta, season with salt, pepper, and red pepper flakes if desired.
- Serve immediately, garnished with extra parmesan if desired.
Notes
- You can substitute with gluten-free pasta if needed.
- For extra flavor, add a squeeze of lemon or a sprinkle of chopped fresh herbs.
