- 1 lb Italian sausage, casings removed
- 1 cup orzo pasta
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
- In the same pot, add chopped onion and garlic; cook until translucent.
- Add orzo and cook for 1-2 minutes, stirring frequently.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is tender and liquid is absorbed.
- Stir in heavy cream, Parmesan, cooked sausage, salt, and pepper. Cook until heated through and creamy.
- Garnish with chopped parsley before serving.
Notes
- Can substitute ground sausage for sliced sausage.
- Add spinach or other greens for extra nutrition.
