Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 cup orzo pasta
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Remove and set aside.
  2. In the same pot, add chopped onion and garlic; cook until translucent.
  3. Add orzo and cook for 1-2 minutes, stirring frequently.
  4. Pour in chicken broth, bring to a boil, then reduce heat and simmer until orzo is tender and liquid is absorbed.
  5. Stir in heavy cream, Parmesan, cooked sausage, salt, and pepper. Cook until heated through and creamy.
  6. Garnish with chopped parsley before serving.
