Ingredients
Scale
- 2 large boneless, skinless chicken breasts
- 2 cups fresh broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika (optional)
- 1/2 cup heavy cream or coconut milk for a dairy-free option
- 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan)
- 1 tablespoon lemon juice
- Fresh parsley for garnish
Instructions
- Start by preheating your grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and paprika. Drizzle with 1 tablespoon of olive oil to prevent sticking. Grill each side for about 6-7 minutes until fully cooked and juices run clear. Let the chicken rest for a few minutes before slicing into strips.
- While the chicken is grilling, steam or blanch the broccoli florets until tender yet crisp, about 3-4 minutes. Drain and set aside.
- In a small saucepan, heat the heavy cream over medium heat. Stir in Parmesan cheese, lemon juice, and a pinch of salt and pepper. Simmer gently until the sauce thickens slightly, about 3 minutes. For a dairy-free alternative, use coconut milk and nutritional yeast instead of cheese. Remove from heat and set aside.
- Divide the cooked broccoli among bowls. Top with sliced grilled chicken. Drizzle generously with the creamy sauce. Garnish with chopped parsley for a fresh finish.
Notes
- Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for 1-2 minutes or warm in a skillet over medium heat. Stir in a splash of milk if the sauce thickens.
- For added flavor, serve with side salads, roasted sweet potatoes, or crusty bread.
- You can substitute heavy cream with coconut milk and Parmesan with nutritional yeast for a dairy-free version.
