- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 12 oz (340g) your favorite pasta (penne, fettuccine, or spaghetti)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Cut the chicken into bite-sized pieces. Season with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken and set aside.
- Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Drain and set aside.
- In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
- Add the cooked chicken back into the skillet with the sauce. Toss in the cooked pasta and stir well to coat everything evenly. Allow the mixture to simmer for a couple of minutes to meld the flavors. Garnish with chopped parsley if desired.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat or microwaves, adding a splash of cream or milk to restore creaminess.
- For a lighter version, substitute heavy cream with half-and-half or milk mixed with a little flour or cream cheese.
- Use chicken breasts instead of thighs for a leaner option, ensuring even cooking and slicing into bite-sized pieces.
