  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 12 oz (340g) your favorite pasta (penne, fettuccine, or spaghetti)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Cut the chicken into bite-sized pieces. Season with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 7-8 minutes. Remove the chicken and set aside.
  2. Bring a large pot of salted water to a boil. Add your choice of pasta and cook according to package instructions until al dente. Drain and set aside.
  3. In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sautรฉ until fragrant, about 1 minute. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt and pepper to taste.
  4. Add the cooked chicken back into the skillet with the sauce. Toss in the cooked pasta and stir well to coat everything evenly. Allow the mixture to simmer for a couple of minutes to meld the flavors. Garnish with chopped parsley if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over low heat or microwaves, adding a splash of cream or milk to restore creaminess.
  • For a lighter version, substitute heavy cream with half-and-half or milk mixed with a little flour or cream cheese.
  • Use chicken breasts instead of thighs for a leaner option, ensuring even cooking and slicing into bite-sized pieces.
