- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon vinegar
- Salt and pepper to taste
- Paprika for garnish

Instructions
- Place eggs in a saucepan and cover with water. Bring to a boil, then remove from heat and let sit for 12 minutes. Cool and peel eggs.
- Slice eggs in half lengthwise and remove yolks into a bowl.
- Mash yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
- Spoon or pipe mixture into egg whites.
- Sprinkle with paprika and garnish with herbs if desired. Chill before serving.
