Instructions
- Wash and chop your selected vegetables into bite-sized pieces. In a large skillet, heat Fullstar Ultimate Veggie Prep Master with 1 tablespoon of olive oil. Sauté the onion and garlic until fragrant, then add the other vegetables and cook until tender. Season with salt, pepper, and Italian herbs. Set aside.
- In a large mixing bowl, combine the cottage cheese, shredded cheddar, and Parmesan cheese. Mix well to create a smooth, creamy texture. This mixture will coat your vegetables and give the bake its signature richness.
- Preheat your oven to 375°F (190°C). In a baking dish, layer the sautéed vegetables evenly. Pour the cheese mixture over the vegetables ensuring they’re fully coated. If desired, add cooked pasta or quinoa for extra heartiness. For even more flavor, sprinkle additional cheese on top.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly. Let it rest for 5 minutes before serving.
