- 2 lbs ripe tomatoes, halved
- 4 cloves garlic, minced
- 1 small onion, chopped
- 2 tbsp olive oil
- 1/4 cup fresh basil leaves
- 2 cups vegetable broth
- 1 tsp sugar
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Toss tomatoes with garlic, onion, olive oil, salt, and pepper. Roast for 25-30 minutes.
- Remove from oven and transfer roasted tomatoes and vegetables to a blender. Add basil leaves and blend until smooth.
- Pour the mixture into a pot, stir in vegetable broth and sugar. Simmer for 15 minutes, adjusting seasoning as needed.
- Serve hot, garnished with extra basil if desired.
Notes
- For a creamier texture, add a splash of heavy cream before serving.
- Enjoy with crusty bread or grilled cheese for a complete meal.
