Ingredients

  • 2 lbs ripe tomatoes, halved
  • 4 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 1/4 cup fresh basil leaves
  • 2 cups vegetable broth
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Toss tomatoes with garlic, onion, olive oil, salt, and pepper. Roast for 25-30 minutes.
  2. Remove from oven and transfer roasted tomatoes and vegetables to a blender. Add basil leaves and blend until smooth.
  3. Pour the mixture into a pot, stir in vegetable broth and sugar. Simmer for 15 minutes, adjusting seasoning as needed.
  4. Serve hot, garnished with extra basil if desired.
