Instructions
- Heat butter and olive oil in a large pot over medium heat.

- Add wine (if using), thyme, salt, and pepper, cooking for another 5 minutes.
- Pour in beef broth and bring to a simmer; cook for 15 minutes.
- Preheat broiler. Ladle soup into oven-safe bowls, top with baguette slices and cheese, then broil until cheese is bubbly and golden.
