  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1 cup milk (dairy or plant-based)
  • 2 large eggs
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a large mixing bowl, combine oats, pumpkin puree, maple syrup, milk, eggs, cinnamon, nutmeg, vanilla, and salt. Mix well.
  3. Pour the mixture into the prepared baking dish. Sprinkle chopped nuts on top.
  4. Bake for 30-35 minutes until golden and set.
