- 1 1/2 cups rolled oats
- 1 cup pumpkin puree
- 1/2 cup maple syrup
- 1 cup milk (dairy or plant-based)
- 2 large eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped pecans or walnuts
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a large mixing bowl, combine oats, pumpkin puree, maple syrup, milk, eggs, cinnamon, nutmeg, vanilla, and salt. Mix well.
- Pour the mixture into the prepared baking dish. Sprinkle chopped nuts on top.
- Bake for 30-35 minutes until golden and set.
- Let cool slightly before serving. Enjoy warm with extra toppings if desired.
Notes
- Can substitute almond milk for dairy milk.
- Best served warm with a drizzle of honey or maple syrup.
- Leftovers can be refrigerated and reheated.
