Ingredients

- 1 lb sausage (sweet or spicy), sliced
- 1 package tortellini (fresh or frozen)
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups spinach or kale
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
- In the same pot, sauté diced onion and garlic until fragrant and translucent.
- Pour in chicken broth and bring to a boil. Add tortellini and cook according to package instructions.
- Stir in heavy cream and cooked sausage. Simmer for 5 minutes.
- Add spinach or kale, cook until wilted. Season with salt and pepper.
- Serve hot, garnished with fresh herbs.
Notes
- You can use turkey or chicken sausage for a leaner version.
- For a gluten-free option, substitute tortellini with gluten-free pasta.
